The Domain Michel Couvreur is one of the most renowned distilleries in Burgundy, but its roots are Belgian. Michel Couvreur, a former wine producer and trader, acquires the Molet cellars in Bouze-lès-Beaune In 1956, before leaving for Scotland to learn the art of making Whisky. From 1978, he began experimenting with a particular aging process in barrels of Sherry and of Porto, and becomes an independent bottler. Michel Couvreur never specifies the origin of the distilleries with which he works, favoring the notion of terroir and of aging as essential elements of whisky quality. In 2013, upon his death, his work was taken over by his daughter and son-in-law, with the help of the expert master blender. The whiskies Michel Couvreur are aged in an exceptional cellar, carved directly into the rock of Burgundy, at a temperature and humidity perfect for maturation. Each barrel is closely monitored, and each bottle is carefully corked, waxed, and labeled by hand.
