Michel Couvreur, , producer and trader wine in Burgundy, acquired the Molet cellars at Bouze-lès-Beaune in 1956, and then developed his own expertise in the field of whiskey. He has profoundly influenced the way in which the whiskies are raised and bottled, particularly with its philosophy that "90% of the quality of a whiskey comes from the barrel, and only 10% from the distillation process.". Michel Couvreur has always insisted on the importance ofBarrel aging under ideal conditions for aging spirits. Its whiskies are unique, all aging in a cellar with 150 meters of galleries carved into the Burgundian rock. The humidity, silence, and depth of this cellar provide exceptional conditions for the maturation of the whiskies, allowing the production of spirits with great complexity. Since his passing in 2013, his daughter and her husband have taken over the business, supported by the cellar master, to perpetuate the excellence of the whiskies Michel Couvreur.
