The Domaine Michel Couvreur: The Michel Couvreur estate, founded by the eponymous Belgian wine merchant, is renowned for its exceptional whiskies aged in Sherry and Port casks, with meticulous care taken at every stage of production. Michel Couvreur, after working in Scotland to learn the secrets of distillation, decided to purchase the Molet cellars in Bouze-lès-Beaune in 1956, a unique location conducive to crafting quality whiskies. His philosophy is based on the importance of aging in casks, which he considers to be the key to the quality of the whisky, more so than the distillation process itself. The estate's whiskies are carefully blended and bottled by hand, ensuring consistently high quality.
The Whisky Clearach 43% is a single malt distinguished by its unique production process. Distilled in Scotland, it is then aged in very old Sherry casks in Burgundy, within the estate's exceptional cellars. This aging in casks that have held Sherry allows the whisky to develop exceptional complexity and richness. It is slowly reduced with water from the Pentland Hills in Scotland before being bottled at 43% alcohol, without being chill-filtered, preserving all the purity of its aromas and giving it a slightly cloudy color.
