The Domain Michel Couvreur is an institution in the world of whisky, combining ancestral expertise and innovations in aging techniques. Michel Couvreur, of Belgian origin, began his career in production of wines in Burgundy before becoming passionate about whiskey production. He acquired the Molet cellars in Bouze-lès-Beaune In 1956, a unique cellar was carved 150 meters under the Burgundian rock, offering ideal conditions for the maturation of spirits: Humidity, , silence, and depth.
Michel Couvreur never mentions the origin of its distilleries on its labels, because according to him, the quality of a whisky comes primarily from the barrel and not from the distillation process. He believes that "90% of a whisky's quality comes from the barrel, and only 10% from the distillation process." This visionary approach allows him to create whiskies of great complexity and Balance, which he perfected throughout his career, and which continue to be produced in the cellars of the house with the help of his daughter and son-in-law after his death in 2013.
