For more than 30 years, the Hospices de Beaune field has not used chemical weed killers and has been using ever more environmentally friendly methods. In the cellar, the approach of Ludivine Griveau, manager of the estate since 2015, is to let nature express itself as sincerely as possible in the wines, while using modern oenological tools if necessary. Vinification is carried out in accordance with the rhythm of maturity of each of the climats of the estate's plot. This results in naturally precise wines, which better reflect their terroirs.

This Volnay 1er Cru ''Cuvée Blondeau'' 2018 from Domaine des Hospices de Beaune is made from a cuvée composed of 70% Champans and Taille Pieds, planted between 1952 and 1989. Half of the Ronceret planted in 1961 and half in 2005, and the Mitans planted between 1955 and 1972, make up the remainder. This results in fine, full-bodied, generous and powerful wines.
This wine has a beautiful luminous red colour, a complex nose of wild berries, black fruits and sour cherries. The palate is elegant and structured and takes up all the typicity of the terroirs that make up this cuvée.
This cuvée selected by the Athenaeum has been aged and bottled by la maison Jehan Emonin.

A superb Volnay that will go perfectly with eggs en meurette, a barbecued prime rib and why not a Bresse poultry with morels...
