François Raquillet's 2021 Mercurey "Vieilles Vignes" is a red wine made from old Pinot Noir vines, from three plots facing south and east: Chazeaux, Ormeaux and Meix. Grown on 2 hectares of clay-limestone soils, with an average age of 60 years, this wine is made with environmentally friendly cultivation practices, including specific pruning and mechanical tillage. The vinification includes a cold pre-fermentation maceration followed by natural fermentation with indigenous yeasts, then ageing in oak barrels for 12 months. The result is a tasty and gourmet wine, with notes of fresh fruit, with a smooth and elegant texture. To be enjoyed slightly chilled, this wine can be enjoyed young on the fruit or more evolved, and it offers a complexity that can develop over a period of 4 to 6 years.
