Jérémy Arnaud founded his wine estate in 2016, in the heart of the Chablis vineyards. Coming from a family of winegrowers, Jérémy nevertheless chose to start his adventure alone by acquiring a plot of 0.55 hectares. In parallel with his National Oenologist Diploma, he settled in Beine with a plot of Chablis Premier Cru and another of Petit Chablis.

His experience in various wine estates in Chablis, Meursault, Beaune and even Pauillac has allowed him to observe and understand different production structures, whether small or large, conventional or biodynamic. Jérémy Arnaud strives to let the plant express itself fully, creating authentic wines that reflect their terroir and vintage.

Convinced that wine is made above all in the vineyard, Jérémy adopts a rigorous ecological approach. He minimizes the use of inputs, works the soil carefully to preserve its integrity, sets up ecological development zones around his plots and protects the landscape heritage of his vineyard. In the cellar, he favors precise monitoring during the vinification and aging phases, limiting interventions to what is strictly necessary so as not to alter the origin and typicality of the wine. No yeasting, no inoculation of lactic acid bacteria, no enzymes, and SO2 doses are reduced to a minimum.
