Jérémy Arnaud established his vineyard in 2016 in the Chablis wine region. Coming from a family of winemakers, he decided to start on his own, purchasing a 0.55-hectare plot in Beine, which includes Chablis Premier Cru and Petit Chablis. Alongside his National Diploma of Oenology, he gained valuable experience by working in various wine estates in Chablis, Meursault, Beaune, and Pauillac, observing different production methods. Jérémy prioritizes a strict ecological approach, limiting inputs and carefully working the soils to preserve their integrity. In the cellar, he minimizes interventions to respect the origin and typicity of the wine, without the use of yeasting, lactic bacteria inoculation, or enzymes, and with minimal doses of SO2. His wines faithfully reflect their terroir and vintage.
