The Domaine Joseph Colin, led by Joseph Colin, son of the renowned winemaker Marc Colin, represents a new generation of winemakers in Burgundy. His estate of 6.5 hectares spread over Saint-Aubin, Chassagne-Montrachet, and Puligny-Montrachet, is distinguished by vineyard practices that respect the terroir, without the use of sulfur until bottling, following biodynamic influences such as lunar observation. Each vintage produced by Joseph Colin offers authenticity and crystalline purity that illustrate his commitment to quality and finesse.
The Saint-Aubin Blanc "Compendium" 2021 comes from vines aged 20 to 45 years located in exceptional plots such as Champ Tirant, En l’Ebaupin, Tope Bataille, Le Banc, and Au bas de Jorcul. These vines, exposed on high slopes and planted on clay-limestone soils, benefit from optimal sunlight, giving the Chardonnay a unique minerality and aromatic finesse. Manual harvesting and minimal intervention vinification help preserve all the freshness and complexity of the grape.
After the grapes are fully pressed, the must is transferred by gravity into barrels for an alcoholic fermentation with indigenous yeasts, without the addition of sulfites or stirring. The 12-month aging in oak barrels (of which 15 to 20% are new barrels) enriches this wine with a lovely complexity and a perfect balance between roundness and liveliness.
