LA MAISON Albert Bichot, founded in 1831 by Bernard Bichot in Monthélie, has established itself in the Burgundian wine world. The family heritage dates back to 1214 in Châteauneuf-en-Auxois. Under Albert Bichot I, it moved to Beaune in 1912, beginning an international expansion. Subsequent generations modernized infrastructure and conquered new markets. Albéric Bichot, since 1996, has been guiding la maison towards sustainable viticultural practices, switching to organic farming in the 2000s. Committed to the preservation of the environment, la maison supports marine research and the protection of the climats of Burgundy. Culturally, it promotes literature, music and les arts through various events. The Nuits-Saint-Georges Blanc "Les Terrasses" Monopole Château-Gris 2021 is an exceptional wine from the Château-Gris de la maison Albert Bichot estate. This rare wine is made from the Chardonnay grape variety, grown on clay-limestone soils. The 0.85-hectare vineyard, with an average age of 25 years, is planted on terraces on a hillside sud-ouest of Nuits-Saint-Georges, at altitudes ranging from 260 to 330 metres.
The vinification and ageing of this wine are carried out with care: manual harvesting, sorting of the grapes, slow pressing, alcoholic fermentation and ageing on fine lees in oak barrels (25 to 35% of which are new) for 14 to 16 months. On the palate, this wine reveals a refined bouquet with floral, mineral and toasted notes. It has a beautiful harmony between freshness and roundness, with a well-marked mineral support and a discreet and elegant woodiness. Its long persistence on the palate makes it a remarkable wine. It is recommended to serve it between 12 and 14°C and to enjoy it young to fully appreciate its fruity aromas, or to let it age for 3 to 5 years, or even more. It goes perfectly with finely cooked fish and seafood, as well as roasted poultry and white meats in sauce.
