The health issue in the regulation of wine production and consumption involves the perpetual search for a balance between often divergent objectives: consumer protection, production optimization, conquering new markets, sustainable development, and safeguarding viticulture practices. While the debate is not new, it arises today in unprecedented conditions: advances in medical science, the development of the concept of risk and its management, the multiplicity of regulatory levels in this field, and the rise of civil society as an actor or value in the regulation of the economy. This book brings together the work of a study day held in Reims on January 15, 2015, as part of the "Wine & Law" Program. These works do not claim to provide an overview of all the rules regarding vines and wine, which would either serve or compromise the health cause. It is also not about taking a position on the "demonization" approach to wine. The ambition of the book is to take a fresh look at this issue, beyond the "health or alcohol" dilemma, by understanding different normative interventions in terms of legitimacy of action and legal responsibilities.
