Description
Fertilization is a topic that has fascinated winemakers for over a century. The pursuit of proper maturity, combined with high yield, was synonymous with prosperity. All of wine-growing France used sodium nitrate from Chile, thereby creating the epic of Cape Horners and the famous sailor songs, stopping over in Valparaiso.
Then came the time of the Alsace storks, suppliers of potash. Phosphorus, however, was more discreet. Time passed, production quotas gradually imposed themselves, and quality requirements have now become the rule for winemakers. Therefore, fertilization must be reconsidered in another way, not stopping at the vineyard, but going into the cellar to ensure fermentations, preserve the balance of the wines, develop aromas, and facilitate aging.
In short, fertilization must now contribute to the quality of the wine and meet the desires of oenologists. Alongside this imperative, another is appearing: the need to decontaminate, and through balanced nutrition, strengthen the natural defenses of the vine and make it less vulnerable to diseases.
This work was written with the aim of responding to these new challenges while remaining practical and easy to use.
