In the context of studies dedicated to the economics of culture, heritage value and economic value have long appeared to be opposed. The heritage valorization of local economies has, however, continued to progress over the past two decades. From the Latin American Andes to the slopes of the Anti-Atlas, from the Himalayan foothills and the rice terraces of Asia to the Burgundy coast in France, cultures such as coffee, argan, saffron, tea, rice, and vineyards, to name a few, have generated know-how, architecture, and landscapes that are now protected and valued by various international conventions and labels. These new heritage objects have the particularity of including an intrinsic economic dimension that sustains and develops territories and their human communities. Using the example of the Climats of the Burgundy vineyard World Heritage site, this book presents an original reflection on the complementarity of the cultural and economic values of terroirs around the world by combining monetary and non-monetary data for the evaluation of agricultural sites. It also addresses the question of the complementarity of international certifications (World Heritage, Globally Important Agricultural Heritage Systems, Biosphere Reserve, Geographical Indication) as drivers of long-term territorial development.
