Description
Most of the publications on Champagne wine start with the effervescence. However, the planting of vines in the region dates back to Roman times, and the large ecclesiastical estates of the Middle Ages shaped a landscape of which we are the heirs. The role of wine in sociability, the rituals that accompany the opening of a bottle, the images and values attributed to it, all date back to modern times. Historians, archaeologists, geologists, geographers, botanists, sociologists, architects, and representatives of the profession came together in a conference that aimed at a long-term perspective. The texts gathered here mark the renewal of viticultural studies in Champagne, under the seal of multidisciplinarity.
