The Rencontres du Clos-Vougeot 2020, edited under the direction of Jocelyne Pérard and Claudine Wolikow, are an essential event for all wine and culture enthusiasts. Organized by the UNESCO Chair "Culture and Traditions of Wine" at the University of Burgundy, these Meetings explore wine as a cultural product and a vector of civilization, in connection with the values of conviviality and sharing.
During these fourteenth Meetings, held on October 1, 2, and 3, 2020, more than twenty specialists analyzed the incredible sensory and chromatic diversity of grapes and wines. The book explores, in a cross-cutting manner, the historical, technical, and economic developments that influence this richness.
The first section of this collection focuses on the historical processes that define the taste and color of wines. It reveals key episodes, such as the practices of the Etruscans, the Romans, or the evolutions of Bordeaux vineyards in the Middle Ages. The chemical history of vats is also addressed, revealing the complex interactions that explain the aromas and hues of wines.
The second section explores the impressive plurality of tastes and colors on a global scale. Territorial peculiarities like Greek retsina or Portuguese vinho verde are studied, as well as the influence of consumer perception and the role of human senses in the discovery of wines.
Finally, the third section addresses extreme phenomena, such as vine diseases, wine defects, or regulatory constraints. The book challenges the idea that tastes and colors are beyond debate, offering rich and insightful reflection.
