A historical and scientific dive
The first section of this collection focuses on the historical processes that define the taste and color of wines. It reveals key episodes, such as the practices of the Etruscans, the Romans, or the evolutions of Bordeaux vineyards in the Middle Ages. The chemical history of vats is also addressed, revealing the complex interactions that explain the aromas and hues of wines.
Global diversity of wines and grapes
The second section explores the impressive plurality of tastes and colors on a global scale. Territorial peculiarities like Greek retsina or Portuguese vinho verde are studied, as well as the influence of consumer perception and the role of human senses in the discovery of wines.
