Description
Sébastien Bras is one of those lines of chefs who have made and are making French gastronomy. His father, the legendary Michel Bras, himself inherited the family restaurant in the village of Laguiole in Aveyron.
In 1992, he opened Le Suquet, which offers breathtaking views of the Aubrac plateau: a breathtaking landscape, quelque part between Nordic forests, illusions of Mongolian steppes and Scottish moors. Very quickly, Michel Bras brought the restaurant to an unparalleled level of excellence and recognition, with three stars in the Michelin Guide.
Reviving this isolated territory, he invented dishes that have become emblematic such as the Gargouillou of young vegetables as well as the famous Coulant au chocolat.
In 2009, Sébastien Bras took over the reins of Le Suquet. Like his father before him, he defends a cuisine rooted and shaped by the earth, a plant-based cuisine, where wild harvests, the family vegetable garden and the work of local producers are inexhaustible sources of creativity.
