Vinified without sulfites in large wooden vats, amphorae, and old barrels, it is aged for 14 months on total lees, then 1 month in stainless steel tanks. Bottling is done without fining or filtration, on a fruit day, thus preserving the purity of the wine. With a microproduction of only 2300 bottles and 36 magnums, this rare wine is a real gem.
