The Domaine de Villaine, located in Bouzeron, in the heart of the Côte Chalonnaise, perpetuates an ancient wine tradition. Nestled between Santenay and Mercurey, this estate benefits from an exceptional terroir shaped by the monks of Cluny since the Middle Ages. Specializing in the Aligoté grape variety, the vines on hillsides at 270-350 meters above sea level benefit from limestone soils and a warm microclimate, ideal for optimal ripening of the grapes. The Bouzeron AOC, renowned for its small surface area and controlled yields, remains a little-known treasure of Burgundy.

The Rully blanc "Les Saint-Jacques" 2022 from Domaine de Villaine comes from vines planted in 1990 at a place called "Les Saint-Jacques", at the bottom of hillside facing east, near the prestigious Clos Saint-Jacque de Rully. Made from Chardonnay with moderate yields, selected for its finesse rather than its power, this wine seduces with its aromatic subtlety. To be enjoyed between 2 and 6 years, it reveals all its delicacy at a temperature of 12 to 14 degrees Celsius, perfectly accompanied by fish, white meats and mild goat cheeses, ideally without spicy sauces.
