Two brothers (Romain and Jean-Guillaume) from a family of vigneron Aloxe Corton, passionate about gastronomy, wine and terroir, decided to combine their skills in order to offer the wines they had dreamed of for a long time. They founded la maison Chapuis Frères in the heart of the village of Pommard in 2009.
This Bouzeron 2021 is produced from the Aligoté grape variety, the only village appellation to be able to produce wines based on this grape variety. Aligoté (6% of the Burgundian grape varieties) is a very old plant in Burgundy. This fairly vigorous white grape variety bears grapes that are a little larger and more numerous than those of Chardonnay. "The Aligoté grape variety is a cross between Pinot Noir and Gouais (a Gallic grape variety) that has now disappeared. The Aligoté grown in Bouzeron is said to be golden: when the grapes ripen under the effect of the sun, their skin, thinner than the traditional Aligoté produced in the rest of Burgundy, takes on a golden hue and above all allows a balance in the ripening between alcohol and acid." Here is a wine with a pale gold colour, its nose evokes acacia, white flowers and citrus fruits with a mineral note (flint, flint). On the palate, its sharp roundness, its full-bodied body and its greedy liveliness reveal the typicity of this grape variety on the Bouzeron terroir.
Ideal with seafood (perfect with oysters, whose intense minerality and iodine strength it channels), it will go well with shellfish as well as with white meats (veal, poultry in white or creamy sauce) and mushroom risottos on the side will magnify the pairing. Traditionally, like all Aligoté, the Bouzeron appellation is served as an aperitif with good gougères or with starters: parsley ham, mixed salads, quiches The Bouzeron appellation will go perfectly with most goat cheeses, Beaufort, Comté and Cîteaux.
