SAB'S Le Marc | Alambic Bourguignon
Located in Beaune, at the heart of the Burgundian wine region, SAB'S L'Alambic Bourguignon perpetuates an ancestral tradition with passion and precision. Once present in every village, the distillers are now rare, and SAB'S is one of the last artisans keeping this craft alive. The estate carefully transforms the grape marc and wine lees from the finest Burgundian terroirs to create unique and expressive eaux-de-vie.
The SAB'S Le Marc is exclusively crafted from Burgundian Pinot Noir, an emblematic grape variety of the region. After precise distillation, the eau-de-vie ages for 7 years in small Burgundy oak barrels, followed by a finishing period of 6 months in Cognac barrels. This double maturation develops a remarkable aromatic complexity, where fruity and woody notes blend harmoniously. Each bottle is carefully hand-sealed with a distinctive orange wax, a sign of its authenticity and elegance.
The SAB'S Le Marc is an eau-de-vie ideally enjoyed neat, served in a tulip glass to concentrate its delicate aromas.
It pairs perfectly with a plate of aged cheeses, such as an aged Comté or summer Beaufort, where the aromatic richness of the Marc will highlight the intense flavors of the cheeses. For a sweet experience, pair it with an intense dark chocolate fondant, where the woody and licorice aromas of the spirit create a perfect balance with the bitterness of the chocolate.
At the end of a meal, this eau-de-vie can be served with a premium cigar, offering a refined sensory experience where the aromas of wood, vanilla, and licorice intertwine harmoniously.
For optimal tasting, serve the SAB'S Le Marc at a slightly cool temperature, around 18-20°C. Use a tulip glass to concentrate its aromas and let it rest for a few moments before tasting to allow its complex fragrances to fully reveal themselves.
The SAB'S Le Marc from SAB'S L'Alambic Bourguignon is an eau-de-vie of great finesse and exceptional aromatic depth. Aged with patience and expertise, it embodies the Burgundian artisanal craftsmanship and offers a unique tasting experience. Whether for a special tasting moment or to accompany refined dishes, this eau-de-vie is a true invitation to sensory pleasure.
