Fine de Bourgogne "Finish Rivesalte Cask" | Alambic Bourguignon
Located in Beaune, at the heart of Burgundy, the Alambic Bourguignon is an heir to an ancestral tradition where the art of distillation has been passed down with passion and precision. Carefully transforming the grape pomace and wine lees from the best Burgundy terroirs, this producer perpetuates a unique know-how, recognized for the production of AOC Marc de Bourgogne and Fine de Bourgogne.
With an innovative approach and deep respect for the product, the Alambic Bourguignon stands out with unique creations such as this Fine de Bourgogne "Finish Rivesaltes Cask".
This Fine de Bourgogne is made from Pinot Noir and Chardonnay lees from the prestigious vineyards of Burgundy. After traditional aging for 7 years in small Burgundy oak barrels, it benefits from a 6-month refinement in Rivesaltes casks, a natural sweet wine from the South of France.
This passage in Rivesaltes casks brings a subtle and natural sweet note, as well as a rich and balanced aromatic structure, while preserving the delicacy of the Burgundy grape varieties.
- Color: Golden and bright, with elegant amber reflections.
- Nose: Intense and expressive, revealing aromas of dried fruits, candied apricots, and vanilla, combined with a subtle hint of caramel and sweet almond.
- Palate: Ample and silky, the Fine de Bourgogne reveals a beautiful aromatic complexity, marked by notes of ripe fruits, honey, and roasted almond. The vinous structure is precise, perfectly balancing sweetness and liveliness.
- Finish: Persistent and delicate, with a subtle sweet note reminiscent of Rivesaltes and a slight woody touch.
The Fine de Bourgogne "Finish Rivesaltes Cask" is an elegant and sophisticated brandy, ideal for unique tasting moments.
As a digestif, it is enjoyed pure, slightly chilled, to fully appreciate its aromatic intensity and subtle sweetness.
In gourmet pairing, it will enhance an intense dark chocolate fondant, where its notes of dried fruits and almond will create a perfect harmony with the rich chocolate.
It will also accompany a pan-seared foie gras delicately caramelized, adding a rich and balanced aromatic dimension.
For a bolder pairing, serve it with a caramelized apple tarte Tatin or a vanilla crème brûlée, where its sweet and woody notes will magnify the dessert flavors.
In a cocktail, it can be highlighted in a revisited Brandy Sour, bringing unparalleled elegance and unique aromatic depth.
