Guardian of a centuries-old tradition, theAlambic Bourguignon is located in Beaune, in the heart of wine-growing Burgundy and seeks to preserve the ancestral art of distillation. Once one boiler per village, today there are only a handful of craftsmen carrying on this heritage. TheAlambic Bourguignon processes grape marcs and wine lees from the most prestigious terroirs of the region and are among the last to produce the AOC Marc de Bourgogne and Fine de Bourgogne. They also offer a very nice range of Gin and Eaux-de-vie from different horizons.
This Très vieille Fine de Bourgogne "finish Pineau" from the Alambic Bourguignon is an eau-de-vie made from 100% Burgundian Pinot Noir and Chardonnay wine lees and then was carefully refined for 7 years in small Burgundy oak barrels, before benefiting from a final touch of 6 months in Pineau barrels. Le Passage in a barrel of Pineau des Charentes gives this very old fine a slight natural sweetness but also notes of fresh grape juice. The aromas of candied grapes are then delicious.
