Description
Eating, drinking, sharing, singing and laughing are the ma words of the feasts held at the Château de Clos Vougeot, which has been bringing together food and wine enthusiasts for nearly a century. 45 recipes from this living heritage will delight your large friendly tables, your family gatherings, your holidays...
Erected during the Renaissance on the vineyard buildings built by the monks of Cîteaux in the twelfth century, the Château du Clos de Vougeot is the seat of the Climats of the Burgundy vineyard and a mecca of French gastronomic repas , both listed as UNESCO World Heritage Sites.
It is here that, sixteen times a year, the Brotherhood of the Knights of Tastevin invites 600 people to memorable receptions called chapters.
Each of these gala dinners, opened by the famous invitation "Bon appétit et grand soif!", reinvigorates the Burgundian culinary tradition and regional products – wild garlic, blackcurrant from the high coasts, saffron from Gevrey, cazette from the Morvan, gingerbread, anise from Flavigny, mustard from Beaune, truffle from Burgundy, asparagus from Cîteaux, Brillat-Savarin...
Monarchs, heads of state and Michelin-starred chefs, diplomats, artists, people of letters and science, start-ups... The whole world likes to come and draw from this source of the art of living "à la française".
Such banquets require a ma of impeccable cuisine and service, which this book reveals behind the scenes. It retraces a vast gourmet adventure launched in 1934 and testifies to the human values defended by some 12,000 knights of the tastevin from America to Asia.
He also shares the flavours, since we find the emblematic recipes of the Château du Clos de Vougeot, detailed here for twelve people... including the emblematic eggs en meurette!
