Rich with the experience and knowledge acquired on the family estate in Volnay, Chantal, Frédéric, and their daughter Clotilde decided in 2014 to embark on the Beaujolais adventure by acquiring old vines in Fleurie. These vines, cultivated organically, have been converted to biodynamics. The soils are plowed by horse, the vines are pruned in gobelet style, and in the cellar, the Burgundian method has been adapted to the Gamay grape to produce wines that are dense and charming with their typicity and accessibility.

The Chiroubles Red 2022 from Domaine Lafarge-Vial is a remarkable wine from a 0.35-hectare plot of Gamay, exposed to the south and southeast. The vines, planted in 1960 on granitic soils, are cultivated using organic and biodynamic farming practices, currently awaiting certification. The vinification begins with the vatting of 15 to 20% whole clusters, with the rest being destemmed before vatting and crushing. Fermentation occurs in cement tanks with native yeasts, followed by a gentle extraction of aromas and colors. The wine is then aged for a year in 228 and 350-liter barrels with a single racking. The Chiroubles 2022 stands out for its freshness, fruitiness, and harmony on the palate, offering a most pleasant tasting experience.
