The Meursault Rouge 2020 from the Domaine du Pavillon de la maison Albert Bichot is a prestigious red wine from Burgundy. Made from the Pinot Noir grape variety and grown on clay-limestone soils with white marl, this wine comes from a plot located north of Meursault, close to the famous "Santenots" climate in Volnay. The manual harvest is followed by a rigorous sorting of the grapes, then a fermentation maceration in temperature-controlled wooden vats for 18 to 21 days. It is then aged in oak barrels (20 to 30% new barrels) for 14 to 16 months. On the nose, it reveals a fine and delicate bouquet with aromas of red fruits (cherry, raspberry) and flowers (rose, violet), subtly enhanced by a woody touch. On the palate, it is fleshy, round and finely structured, offering a silky and fragrant finish. It is recommended to serve it at a temperature of 15-16°C and it can be stored for 3-5 years or even longer. It pairs perfectly with roasted or braised red and white meats, as well as medium-bodied cheeses.
