Description

Entrusting me with a book on chocolate, a good idea. I could get up in the middle of the night to eat it, like a child crying out for sweetness in the heart of its mother's womb. To better understand my enthusiasm, I took part in a questionnaire to the big names in chocolate gathered in this tasty collection.

Is chocolate a luxury?
It all depends on the quality of the chocolate. The better it is, the more attention it requires and time to be devoted.

What is ma definition of luxury?
Take your time.

What does chocolate mean to me?
A lot. A day without chocolate is like a day without love.

My favourite chocolate?
Addicted, I'm ready to bite into everything, but a preference for pralines and 70% dark chocolate.

Why?
The praline is soft and crunchy. When it is well worked, it invites you to travel. Dark chocolate is more reasonable, but good for morale.

Which of the 7 deadly sins evokes chocolate?
Especially not the gluttony.

Chocolate associated with a childhood memory?
Snack it with a baguette of fresh bread, creamy butter and a bar of chocolate bar.

A recipe from my childhood?
The Negro's Head. We're not allowed to say that anymore, so let's talk about "wonderful" and that was my Sunday lunch dessert. There are also the little pastel-colored marshmallows, covered in chocolate, that my great-grandmother used to give us for Christmas.

How much importance do I give to chocolate during a repas ?
Primordial like fireworks. I usually stop at cheeses unless there's a chocolate cake, whether it's moist, melty, baked, semi-cooked, unbaked... During the making of this book, I stopped the chocolate desserts to end with a chocolate candy, as a final point to a moment of sharing.

When do I give chocolate?
Very often because I have the chance to taste many of them, of quality and I want to share my finds with those who have a passion for chocolate. I also treat myself to chocolate regularly because it's the best antidepressant in the world.

If I had to associate a famous person with chocolate?
Obviously, Marcel Proust for this correspondence with his mother: "Finally, my darling, a month has passed, you have only eleven pieces left to eat cake, on which one or two slices will be eaten on leave. I've thought of a way to shorten your time. Take eleven bars of chocolate that you really like, tell yourself that you only want to eat one on the last day of every month – you'll be amazed to see them fly by – and exile with it. »
