Amandine and Jean-Michel Carrette, at the helm of AT pour Aux Terrasses, named after the Michelin-starred restaurant located in Tournus, the family hotel restaurant they have taken over and where they are keeping a story that has lasted for 40 years alive, open up through the texts of Stéphane Méjanès and the photographs of Matthieu Cellard and invite us to meet its producers and suppliers to appropriate the state of mind of la maison.
But what would a book written by a great chef be without recipes, which rather than technical sheets classically divided into ingredients and processes, weight and cooking time are told here by Jean-Michel in order to transcribe the spirit of his dishes.
You will also find a selection of small repas preludes to get you into the mood; some are very easy to make and others are reserved for more seasoned cooking enthusiasts.
