Once known only by purists, today it is widely sought after and acclaimed! Located in Vertus, the estate extends over 8.66 hectares on the Côte des Blancs, divided between Mesnil sur Orger (grand cru), Vertus, Bergères les Vertus and Mont Aimé (premier cru). The focus is on the elaboration of a tasty, expressive and gourmet Blanc de Blancs champagne. Guided by the determination to promote agricultural practices that respect nature and the planet, the winery is committed to the search for cultivation practices in line with its values. This is why, since 2007, Pascal Doquet has been committed to the ecological transition of his estate in order to obtain the Organic Agriculture certification in 2010. The 2009 Champagne Grand Cru Blanc de Blancs "Les Mesnil" by de Pascal Doquet is a nugget from one of the most prestigious vineyards of the Côte des Blancs, Le Mesnil-sur-Oger. The year 2009 was conducive to the ripening of the grapes thanks to its warm month of August, giving the wines a beautiful roundness and a pleasant delicacy. This cuvée is made from a selection of the best vines of la maison, from localities such as "Chétillons", "Coulmets", "Champ d'Alouette", "Migraines" and "Finciarts". These plots are located in the heart of mid-hillside terroirs. To provide flexibility, Pascal Doquet opted for malolactic fermentation. It is then aged for six months in oak barrels, adding complexity and a slight patina. The champagne was bottled in September 2010 with an Extra-brut dosage of 2g/L to let the terroir express itself fully. The 2009 "Les Mesnil " is an expressive and concentrated champagne with potential for evolution. A gem for wine lovers.
