The Domaine Jacques Carillon, rooted in Puligny-Montrachet, embodies a rich winemaking tradition passed down through generations. Jehan Carillon was already a winemaker in 1520, and today, Jacques and Sylvia Carillon continue this heritage, cultivating 5 hectares of the finest terroirs in the village.
The monks of Cîteaux, Maizières, and Cluny played a fundamental role in developing the Burgundy vineyards, and their expertise has been passed down over the centuries. In the 14th century, the popes in Avignon helped popularize Burgundy wines by introducing them to European royalty. Since then, Burgundy has captivated wine lovers worldwide.
Puligny-Montrachet is a jewel of the Côte de Beaune, a paradise for Chardonnay, where the exceptional terroirs produce some of the world's most complex white wines. The village boasts 17 climats, all classified as UNESCO heritage sites, with a winemaking history that spans 2,000 years.
At Domaine Jacques Carillon, respect for the terroir is paramount. "The land never lies," says Jacques. The vines are cultivated in harmony with nature, without forcing them, allowing each vintage to express its full potential. Each year is a new adventure, where the terroir sets the tone for unique wines.
The wines are vinified and aged in oak barrels. After a gentle pressing, the must undergoes fermentation in barrels, where the malolactic fermentation also occurs. The wines are aged on fine lees for about a year, with 20 to 25% new oak barrels used, even for the Grands Crus, to preserve the terroir's authenticity.
The Jacques Carillon style is characterized by minerality, finesse, and balance between power and sophistication. These wines are known for their aging potential, revealing complex aromas after a few years of rest.
