Cartagène is a liqueur wine typical of the Languedoc region, renowned for its ancestral winemaking traditions and respect for the terroir. Inherited from Occitan know-how, cartagène, also known as cartagena, is produced using ancient and meticulous techniques.
Cartagène is a red mistelle that harmoniously combines fresh grape must and wine brandy, thus preserving the full aromatic richness of the fruit. The winemaking process involves fortification with alcohol aged in barrels for 2 years, followed by aging in unfilled barrels, which gives it its oxidative complexity. The Grenache Noir and Mourvèdre grape varieties provide structure and elegance.
The intense color reveals subtle tiled reflections at the rim. On the nose, cherry aromas dominate before evolving towards subtle notes of almond and walnut, characteristic of oxidative-style wines. On the palate, the freshness of the fruit surprises with its indulgence: cherry, blackcurrant, and other ripe black fruits reminiscent of a vintage port. The perfectly integrated sugar brings a creamy texture and remarkable balance.
Cartagène enhances refined dishes. It pairs perfectly with foie gras in black cartagène jelly, accompanied by a red fruit chutney on an anise brioche. For a main course, pair it with a venison steak in cocoa nibs, accompanied by a sauté of morels. A pairing that will delight the taste buds.
