The Domaine Bernard Baudry, established in Cravant-les-Coteaux, is a key reference in the Chinon appellation. Thanks to a great diversity of terroirs and respectful viticulture, Bernard Baudry and his son, Matthieu, create wines that express the identity of Cabernet Franc. The estate is recognized for its philosophy of natural production and its commitment to the purity and elegance of its wines.
The Chinon Rouge "Le Clos Guillot" 2021 comes from a well-exposed limestone hillside in Chinon, offering ideal conditions for growing Cabernet Franc. The vines are carefully maintained, with precise debudding to ensure good aeration and optimal ripening of the grapes.
The harvest is done by hand, in crates, to preserve the integrity of the grapes. Fermentation takes place in wooden vats, with regular pigeages or remontages, promoting a gentle extraction of aromas and tannins. Aging, which lasts 12 months in oak barrels of various wines and then 9 months in cement vats, allows the wine to develop its full complexity. This vintage is not filtered before bottling, thus ensuring all its richness.
The Clos Guillot 2021 is a rich and structured wine, revealing deep aromas of small black fruits like blackberry and blackcurrant, balanced by a minerality typical of its limestone terroir. On the palate, the subtle acidity promises a cellaring potential of 6 to 9 years, making this wine perfect for aging.
This Chinon red ideally accompanies duck dishes or roasted quails. To reveal its full complexity, it is recommended to decant it before tasting. Its structure and aromas also make it a great match for grilled meats and stewed dishes.
