Red wine Nuits-Saint-Georges Vieilles Vignes Domaine Jean Chauvenet
Domaine Jean Chauvenet embodies the very idea of the Burgundian family estate: a small surface area (9 hectares), numerous appellations (8) of the most famous of the Côtes de Bourgogne, the Côte de Nuits, with Pinot Noir as its only grape variety. This incarnation results in red wines with an unmistakable texture, silky and fine.
At the helm, Christophe Drag and his wife Christine work with a single rule: respect for the expression of each of the terroirs for different wines.
HVE certified, the estate has been practising sustainable pest management - a cultivation method that limits the use of phytosanitary products as much as possible - since 1994. The vines have been planted with grass since 2003. The aim is to limit erosion and temper natural vigour in order to control yields. Christophe Drag also practices severe disbudding which offers better aeration of the bunches and therefore a better state of health during harvesting.
The harvest is manual and decided when the grapes have reached the right maturity - phenolic maturity - that of the tannins. This is how the wines of Domaine Jean Chauvenet reveal the finesse, elegance and signature of great wines, supported by a structure that underlines their ageing potential.
This Nuits-Saint-Georges Vieilles Vignes from Domaine Jean Chauvenet has a dense and sustained colour, worthy of a very good ageing ability. Vegetal nuances with wild fruitiness, such as sloes, mingle with strawberry and some floral notes. Over the years, the aromas will become more refined, evolving towards leather, fur, combined with candied strawberry and blond tobacco. A very nice bottle to let evolve for 3 to 5 years before tasting it.
