White Wine Bouzeron 2022 Domaine de Villaine

The Domaine de Villaine is located in Bouzeron, south of Beaune, in the heart of Burgundy. The estate is renowned for its organic farming, certified since 1986. The estate's vines are exclusively cultivated on hillsides, at altitudes between 270 and 350 meters. This unique terroir is characterized by lean, limestone soils that limit yields and promote the development of exceptionally high-quality grapes. The warm microclimate of the hillsides allows for perfect ripening of the grapes, producing wines that combine freshness and finesse while respecting the vine's natural balance thanks to the absence of pesticides and herbicides.

The Bouzeron 2022 from Domaine de Villaine is made from the Aligoté grape variety, planted on the best hillsides of the appellation. Since the estate was established in Bouzeron in 1973, the owners have selected a "golden" variety of Aligoté, known for its lower yields and more refined aromas than the so-called "green" types. This organic white wine perfectly embodies the spirit of the Bouzeron terroir, with characteristic vitality and freshness, balanced by a roundness and structure that evolve admirably over time.

  • Nose: The nose of the Bouzeron 2022 reveals aromas of ripe fruits and citrus, accompanied by delicate notes of white flowers and a subtle sensation of petrichor (that smell of rain on stones). A very light woodiness adds a touch of complexity without weighing down the aromatic profile.

  • Palate: On the palate, the wine is perfectly balanced between the freshness of the fruit, the roundness contributed by its terroir, and a fine texture. The citrus notes and white flowers bring a lovely vivacity, while the wine develops a subtle creaminess with age.

This Bouzeron 2022 pairs perfectly with seafood and shellfish, such as oysters, mussels, and langoustines, as well as with grilled or steamed fish. It also goes very well with cheeses such as fresh goat cheese, cantal, beaufort, parmesan, and even roquefort. It can also be enjoyed as an aperitif, where its freshness will be particularly appreciated.

Serve at an ideal temperature of 12°C to fully enjoy its aromas. When young, it is distinguished by its freshness and vitality, but over time, it gains in body and complexity, and can be kept for up to 10 years.
