White Wine Mercurey white 2020 Domaine du Château de Chamirey

The Domaine du Château de Chamirey which belongs to the Devillard family is planted in the best terroirs of Mercurey and includes 37 hectares - 27 hectares of reds and 10 hectares of whites - including 15 hectares of Premiers Crus. The grapes, harvested by hand, are sorted before being put into vats to remove those that are unripe or degraded. Vatting takes place for a long time, in three phases: pre-fermentation maceration, fermentation, post-fermentation maceration. The vast majority of the wines are aged in oak barrels (about 18 months), a quarter of which is replaced each year. Bottling is done when the wines are still on their primary aromas of fruit and flowers.

This 2020 Mercurey white from the Domaine du Château de Chamirey offers a beautiful golden colour with green reflections, its complex nose is very expressive with notes of white flowers, fern and white-fleshed fruits. On the palate, the acidity and roundness of the Chardonnay find a nice balance with a long and saline finish. It will be the perfect accompaniment to salmon with shallot sauce, pan-fried vegetables (broccoli, leeks) but also a Morbier or a Comté
