Description
Bouzeron White Wine 2021 Domaine De Villaine
The Domaine De Villaine is based in Bouzeron south of Beaune. The vines are cultivated exclusively on hillsides, between 270 and 350 metres above sea level. The lean soils with a high limestone content on these hillsides ensure a good ma of yields and the warm microclimate favours the ripening of the grapes. Certified in organic farming since 1986! Pesticides and herbicides are excluded in order to respect the natural balance.
This Bouzeron 2021 from the eastern Domaine De Villaine comes from Aligoté vines located on the best slopes of the Appellation. Since the establishment of the estate in Bouzeron in 1973, the so-called "golden" varieties have been selected in the very old vines of Bouzeron, where they were traditional, which, as opposed to the so-called "green" types, give smaller yields and finer aromatic wines.
This is a lively and fruity wine as the grape variety wants, but which also has a finesse and a "roundness" that are due to the original character of the terroir.
Its nose expresses the essence of ripe fruit accompanied by refined, slightly woody, intense and fresh notes linked to citrus, with the sensation of smelling of "petrichor" (the smell of rain on pebbles). On the palate, we perceive the balance that can exist between the roundness of the fruit, notes of white flowers and the delicacy of the grain of the wine.
If you taste it young, over its first 2 to 3 years, you will appreciate its qualities of freshness and "fruit". Then, over time, this Bouzeron takes on "fat", fullness and can be kept for about ten years. It should be served at around 12 degrees, as an aperitif or with seafood, fish and many cheeses: goat's cheese, cantal, beaufort, parmesan, roquefort.
