Since taking over the family domain in 1979, Anselme Selosse has changed the perception of champagne, in France and around the world. Sébastien Lapaque is a novelist and literary critic. Since *Chez Marcel Lapierre* ('Stocè, 2004) and *Le Petit Lapaque des vins de copains* (Actes Sud, 2006 & 2002), he has imposed a non-conformist discourse on wine, blending agriculture, literature, history, and ecology. Erudite and delightful, his "theories" emerge, without premeditation, as a pirate and accomplice collection within the Actes Sud catalog: *Théorie de la carte postale* (2014), *Théorie de Rio de Janeiro* (2014), *Théorie d'Alger* (2016).
