Description
At first, nothing was easy for champagne, an uncontrollable wine that is born in a cold climate. Initially uninviting, it will metamorphose in a nocturnal and secret world through the virtues of effervescence and blending. Published for the first time commercially in 1990, this text tells the story of a miracle: the rise of darkness into the light symbolized by the popping of a champagne cork. It is an encounter with discreet and inspired men. The wine of celebration is also the work of a Jansenist, Dom Pérignon. Jean-Paul Kauffmann, who has been exploring the Champagne vineyards for thirty years, is notably the author of "The Dark Room of Longwood" and "The House of Return". He has recently published "Voyage to Bordeaux 1989" with Editions des Équateurs.
