For more than ten years, Sébastien Darsy closely followed the evolution of the Gironde vineyard, witnessing the upheavals of this terroir and investigating the winemakers who, against the grain, refused the chemical drift. Controversies and scandals hit the vineyard, whose taste quality was questioned by consumers themselves. Facing an environmental, taste, and commercial crisis, it was necessary to change course, tearing out hectares of vines to start over. This transformation, although painful, was essential.
Fortunately, pioneering and avant-garde winemakers chose to redefine what Bordeaux wine should be.
