The Paths to Quality (Antiquity – 21st Century), published in 2014, where social science researchers, historians, geographers, sociologists..., in collaboration with oenologists, agronomists, and other life science specialists, challenge the assertion that quality wines were born in the 18th century, a multidisciplinary team from the Institute of Vine and Wine Sciences in Bordeaux signs a second volume on quality, The Wines of Bordeaux. The Paths to Quality.

In this volume, the authors confirm the long history of the Bordeaux vineyard, where the rise in quality appears as a historical construction in which the evolution of knowledge, winemaking practices, as well as the world of commerce and critique, all play a part. Their journey leads to the highlighting of the "soul of Bordeaux" which, beyond origin, beyond organoleptic qualities, shapes the typicity of a Bordeaux wine within a market where wines are increasingly flawless.

The Bordeaux then appears as a blended wine due to the diversity of soils of each cru, due to the variability of the climate, a wine for which the winemaker serves the terroir, as opposed to many other wines of the world, mainly technological wines emancipating from its origin to meet a taste, often oaky, that would be preferred by new consumers.
