The future of wine in French and European vineyards can only be envisioned through a passion for the terroir, far from the myriad temptations of industrialization. It is within this context that Loïc Pasquet, a winemaker from Poitou, settled in the Graves region in 2006 with a mission: to rediscover the taste of Bordeaux wines from before the dramatic phylloxera episode. Jacky Rigaux and Jean Rosen recount his adventure in this book. This winemaker has decided to resist industrialization and the homogenization of taste, and by planting lost grape varieties, foregoing rootstock, and cultivating his vines through permaculture, he manages to reclaim "the taste of the place."
