Description
Behind the Glass by Gus Zhu is a fascinating dive into the chemical and sensory terroir of wine. This book is aimed at curious wine enthusiasts and professionals who wish to understand the scientific mechanisms behind wine tasting.
Divided into three main sections, this book first addresses the visual appreciation of wine. It explains how the color and clarity of a wine can influence our perception before we even taste it.
Next, the author explores the taste of wine on the palate. He details how the different chemical components of wine interact with our taste buds, creating a unique tasting experience for each wine. This section is essential for understanding why some wines seem more acidic, sweet, or bitter than others.
Finally, the last section is dedicated to the smell of wine. Zhu explains how the complex aromas of wine develop and interact with our olfactory sense. He demonstrates that the sense of smell plays a crucial role in the overall wine tasting experience.
Throughout the book, color illustrations enrich the text, making it easier to understand the complex concepts. Behind the Glass concludes with six pairs of wines to taste, allowing readers to put into practice the knowledge acquired throughout the reading.
With a better understanding of the chemical and sensory aspects of tasting, readers will be able to more fully appreciate each glass of wine.
