Description
How do we perceive odors?
What is the composition of the scent of wine and how is it composed?
Why is it possible to distinguish between "soloist" wines and "orchestral" wines?
What are the scents that allow us to recognize a wine?
What happens to the scent of wine over time?
Does wine have a shape?
What does it mean to taste a wine?
What is the language of wine odors?
To all these questions and many more, Luigi Moio answers here with all the passion that drives him, inviting us on a fascinating and richly illustrated journey to discover the invisible yet most moving sphere of wine: its scent. He shares his experience as a researcher and expert in wine odors, recounting flavorful and enlightening anecdotes while maintaining the rigor of scientific inquiry.
This work is the result of over twenty-five years of study and scientific research into the olfactory intimacy of wine.
Luigi Moi is a professor of oenology at the University of Naples Federico II.
For over twenty-five years, he has been studying the sensory, biochemical, and technological aspects of wine aroma. He is the author of over two hundred and fifty scientific publications in international journals. He is also the Vice-President of the OIV (International Organization of Vine and Wine), headquartered in Paris, a member of the Georgofili Academy and the Italian Academy of Vine and Wine.
