The house of Egly-Ouriet, located in Ambonnay, stands out as one of the jewels of Champagne. Founded after World War II, it has gradually expanded its estate to 12 hectares, including parcels in Grand Cru and Premier Cru. A renowned Récoltant-Manipulant, Francis Egly cultivates his vineyards with deep respect for the terroir, favoring massal selections and excluding pesticides.
Each cuvée is the result of meticulous work: the wines are vinified in barrels, without malolactic fermentation, and benefit from extended aging to express their full complexity. These choices give Egly-Ouriet champagnes a unique signature, blending precision, elegance, and depth.
Les Vignes de Bisseuil marks an exploration of the terroir of the Vallée de la Marne, on the premier cru of Bisseuil. Here, chardonnay dominates, representing 80% of the blend, complemented by pinot noir and pinot meunier. The vines, about forty years old and cultivated without pesticides, benefit from a chalk-rich soil, giving the wine remarkable minerality.
The grapes are harvested at perfect maturity, then gently pressed. The fermentation, conducted by indigenous yeasts, takes place in French oak barrels and extends until the spring following the harvest. Without malolactic fermentation, the wine retains a beautiful freshness. After bottling, it rests for nearly four years in the house's cellars to develop a fine effervescence and aromas of great complexity.
