As author and editor of this new collection I can assure you that this pleasure and pride are, for me, augmented by the fact that this publication is the first of its kind. During my travels, I have had ample occasion to observe that Bordeaux wines are appreciated throughout India, but that there was a lack of knowledge as to which wine went with which dish!The first «pairing» is my collaboration with Rameshwar Kuikarni, Brinda Bourhis and Ujwala Samant who carefully chose which Indian delicacies would best accompany the complexity of the wines that I had chosen, tasted and noted along with our Indian and French wine experts: over 40 boules.This culinary journey through the provinces of India and the wines of Bordeaux will serve as inspiration for your wine and food pairings both at home or in a restaurant, and enable you to share in our fine wine discoveries whilst looking for harmony between food and wine because wine enhance the flavour of a dish.
