This first edition is dedicated to the wines of Sancerre. We visited 25 winemakers selected for the quality of their production, often organic and biodynamic, and you will find their profiles accompanied by about fifteen original recipes proposed by our guest chef! To analyze the soils of these magnificent terroirs, we have the privilege of benefiting from the expertise of Thibaut Boulay, son of the great winemaker Gérard Boulay. Thibaut is an academic and researcher, specializing in the geology of this region. Concept presentation: The wine and food pairing is a moment appreciated in gastronomy. But which wines? For which pairings? And what cuisine? I have often asked myself these questions as a journalist and above all as a consumer. After a career at Canal+ as editor-in-chief and many years of training at the Grains Nobles Tasting School in Paris, I wanted to share my experience with you and the expertise of my gourmet friends and seasoned tasters. I consulted a lot of magazines and books, always feeling a certain lack of information and the need to go further in this quest. This is the purpose of the quarterly magazine I am offering you today. The theme? To associate in each issue a terroir and a chef. To tell you about the winegrowers who live the wine according to the seasons. To talk about their life and their passions. To choose wines that respect the environment and therefore the consumer. To provide a real gastronomic answer, simple, creative, and gourmet. To invite a chef to create ORIGINAL recipes based on gustatory, aromatic, and sensory perceptions to break the culinary routine. To define the terroir and its geology, the climate, the vintages... as comprehensively as possible through our articles, interviews, and debates. We want to provide you with answers but also to stimulate your desires. And may these desires travel beyond our borders because wine is beautiful elsewhere too. This is our ambition for your new magazine Le Goût des Couleurs. The format will remain loyal to paper, with of course an app and web extension where you will find our selection of videos, recipes, and wines at your fingertips. Yes, a paper magazine remains a challenge in the digital age. But it is essential for us to remain concrete, on a physical medium, at a time when our daily lives dematerialize and promise many virtual rewards. Le Goût des Couleurs will bring together a professional team of enthusiasts, journalists, wine merchants, restaurateurs, and tasters whose experience and expertise will deliver in each issue a beautiful selection of wines enhanced by the recipes of a chef for whom the table is inseparable from the cellar.
