This ninth issue of the Gastronomy Notebooks marks the beginning of the third year of our journal's existence. After the missed opportunity represented by the first edition of the Gastronomy Festival - on September 23rd - which turned out to be more of a big commercial event than a celebration of gastronomy in French culture, the space dedicated to gastronomy still seems quite narrow. We dedicate our feature to the proceedings of the François Rabelais Meetings held last year, exploring the connections between cuisine, pleasure, and health. This issue of the Gastronomy Notebooks also invites you to take a gourmet look at the works of Gustave Flaubert and the table of Emile Zola, as well as to reflect on the presence of Clos in champagne and on lamb blanquette. We will conclude this issue with a re-reading of an excerpt (November and December) from Alexandre Grimod de la Reynière's nutritional calendar. Grimod, the founding father of gastronomy, deserves to be honored as he should be, on September 23rd or any other day of the calendar.
