Description
The work presented here is of the utmost importance for understanding the culture of vineyards and the production of still and sparkling wines, as they were practiced in Champagne at the end of the 17th century. It merits recognition for detailing the specific pressing technique that allowed for the production of white wine from black grapes, then known as "grey wine". This process is still used today for champagne production, where two-thirds of the musts come from black grapes. "Manière de..." is the first publication that addressed the methods of making sparkling Champagne wine, especially regarding the choice of the time of bottling. It was referenced by most authors of the 18th century, including Abbé Pluche in 1732 for his discussions XIII and XIV in "Spectacle de la Nature", and Louis Liger in "La Nouvelle Maison Rustique". This 1990 reissue, identical to the 1772 edition, aims to make public a crucial document for the history of winemaking, particularly that of champagne.
