Monthelie Blanc "Sous Le Cellier" 2022 | Wine from Domaine Jean-Philippe Fichet
The Domaine Jean-Philippe Fichet, anchored in Meursault, is a reference for lovers of great white Burgundy wines. Jean-Philippe Fichet vinified his first vintage in 1981 and has developed a range of wines where the purity of the terroir is central. Working with organic methods, he applies careful cultivation: homemade composts, plowing, manual harvesting, and indigenous yeasts. In the cellar, each cuvée is aged with precision to preserve its balance between tension and smoothness.
The Monthélie Blanc "Sous Le Cellier" 2022 comes from a unique climate located between Monthélie and Nantoux, on a west-facing slope. The soil, composed of limestone scree and silt, gives this wine a marked minerality and beautiful tension. The young Chardonnay vines are cultivated with the utmost care, and their harvest is followed by aging in oak barrels and then refining in stainless steel tanks for six months to enhance the wine's freshness.
This Monthélie Blanc 2022 presents a bright robe with golden reflections. On the nose, it offers a complex palette combining minerality (flint), fresh citrus, and white flowers. On the palate, the attack is lively and refreshing, supported by a lovely tension and creamy texture. The finish is persistent, marked by subtle notes of hazelnut and a hint of salinity.
This Burgundy Chardonnay pairs wonderfully with seafood, such as oysters or a scallop carpaccio, highlighting its minerality and freshness. It also pairs with grilled fish, like a baked sea bass or sole meunière, whose finesse is enhanced by its aromatic balance. Finally, it pairs perfectly with mature cheeses, such as a young Comté or Chabichou du Poitou.
