The Domaine Alice et Olivier De Moor is located in Courgis, Burgundy. Founded in 1989 by Alice, originally from Jura, and Olivier, a former vineyard manager at a large estate in Chablis, this family-owned domain embodies the art of organic winemaking. With meticulous management of 4 hectares of vines since 1995, the couple has consistently innovated to produce unique and environmentally friendly wines. In 2005, they embraced organic farming, eliminating chemical inputs. Their winery, built in 2007, allows for gravity-fed processes, preserving grape quality, while the absence of sulfur during harvest reinforces their commitment to natural wines.

The VDF White "Nuova Descriptio" 2022 is the successor to the "Sans Bruit" cuvée. This bold wine combines typical and rare grape varieties, namely Sauvignon Blanc, Sauvignon Gris, Aligoté, and Chardonnay. This harmonious blend comes from the Saint-Bris appellation and is carefully vinified in accordance with organic practices. The grapes are hand-harvested, ensuring impeccable quality.

The VDF White "Nuova Descriptio" reveals fresh and expressive aromas of citrus and white flowers on the nose, enhanced by notes of white-fleshed fruits. On the palate, its lively attack gives way to a silky and balanced texture. A lingering finish reveals mineral notes and a hint of salinity, typical of the Burgundy region.

This wine pairs perfectly with a seafood salad, grilled fish with lemon, or fresh cheeses like goat cheese or tomme. Its freshness also makes it an excellent choice for slightly spicy dishes or refined appetizers such as a dorade tartare.
